Introduction: Sharp Cheddar Knot Rolls
I love baking all kinds of cookies, cakes and pies but I feel like nothing compares to the aroma and taste of freshly baked bread, hot from the oven! I created this recipe several years ago with the thought that my rolls should taste like the famous cheddar biscuits at that nationally known seafood restaurant. I started with a bread recipe that was nice and fluffy that I had been baking. I added several ingredients to that bread dough and a brushed on a topping. My family thought my rolls were a winner and I have made them many times since then. Here you can follow along to make these very flavorful rolls in your kitchen for your family!
Supplies
Ingredients
1/2 cup milk
1 1/8 teaspoon active dry yeast
1/4 cup butter, softened
2 tablespoons granulated sugar
1 egg
1 1/2 teaspoons garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon cayenne pepper
2 cups bread flour
1 cup shredded sharp cheddar cheese
Tools and supplies
12-cup muffin tin
rubber scraper
bench knife or sharp knife
plastic wrap
electric mixer with paddle and dough hook attachments
candy thermometer
Step 1: Heat the Milk
In a glass measuring cup, microwave milk at 100% power at 20 second intervals. Check the temperature with a candy thermometer until temperature reaches 110 to 115 degrees F.
Step 2: Add the Yeast
Stir the yeast into the warm milk. Allow to rest for at least 5 minutes.
Step 3: Begin Mixing
In the bowl of stand mixer, using the paddle attachment, combine butter, sugar, eggs, garlic powder, kosher salt and cayenne pepper.
Step 4: Add Flour and Yeast
Change the paddle to a dough hook. Add flour and yeast mixture. Stir on low speed to blend the ingredients. Knead the dough for 7 minutes on low speed until it is smooth and elastic.
Step 5: Add the Cheese
Add the sharp cheddar cheese. Mix on low speed for one minute.
Step 6: Cover It!
Cover the bowl with plastic wrap. Let rise in a warm place for 1 hour, or until the dough is doubled in size.
Step 7: Deflate It!
Punch down to deflate the dough. Remove it from the bowl with oiled fingers.
Step 8: Make 12
Form a big ball of dough and place on a work surface. Cut in half, then in quarters, then into 12 equal sized balls of dough.
Step 9: Roll Them
Stretch and roll each ball of dough into a log approximately 5 inches long.
Step 10: Knot Them
Form each into a knot and place into 12 greased muffin cups.
Step 11: Rise Again
Cover with plastic wrap and let rise in a warm place for 40 minutes.
Step 12: Time to Bake!
Preheat the oven to 350 degrees F. Bake for 20 minutes or until the rolls are golden brown. Remove from the oven.
Step 13: Cool and Remove
Allow to cool in the pan for 5 minutes, then carefully remove.
Step 14: Make the Topping
Ingredients
3 tablespoons butter, melted
1 tablespoon dried parsley
1/2 teaspoon garlic powder
Supplies
small bowl
tablespoon measure
1/2 teaspoon measure
basting brush
Step 15: Stir It
