Introduction: Barley & Rice Spiced Soup
Hi everyone! Today I am making a fast and easy soup to warm up our tummies as the days get colder in December. This soup is wholesome, a little spicy and filled with delicious meats. It also promise to keep you full throughout the day as it is filled with tender barley and rice. So let's prep some ingredients, throw them in the pot and get cooking!
Step 1: Ingredients
Ingredients:
2 cups of diced chicken thigh or breast
1 spicy smoked sausage, sliced
1 cup of chopped celery
1 cup of diced carrots
1 cup of diced red bell peppers
1 cup of diced white onion
1/4 cup of finely chopped garlic
1 carton of chicken stock
1 can of diced tomato (original or jalapeno)
2/3 cup to 1 cup of Quick barley
1/2 cup of white jasmine rice
1/2 cup of frozen corn
Cooking Oil of your choice
Step 2: Directions
Start by heating a large pot or a stew Dutch oven on high with 1/4 cup of cooking oil. Preheat until the oil is hot but not smoking.
Add in your raw chicken and cook completely.
Add in you peppers, onion, celery, carrots and garlic and cook until the vegetables are tender.
Next, add in your sliced sausages and continue cooking.
Step 3: Add in the Liquids
Pour in your canned tomatoes and chicken stock.
Spiced Ingredients:
2 tablespoon of paprika
1/2 teaspoon of salt
1 bay leaf
1/2 teaspoon of cayenne pepper
1/2 teaspoon of black pepper
1/2 teaspoon of white pepper
1/2 teaspoon of msg* (*optional)
Add in your spices into the soup and let it boil gently.
Next, pour in your barley and rice and stir.
Let it cook covered with a lid, for 20 minutes on medium heat.
If soup starts to thicken and has little liquid inside, add in 1-2 cups of water and stir.
The soup is ready once the rice and barley are tender.
Serve hot.
Step 4:
You are welcome to garnish your soup with some chopped parsley or cilantro. And complete!

Normally I wouldn't have much to comment about this easy smile-on-my-face soup. I would make it, eat it, smile, save the recipe and promptly forget where the recipe originated. However, and it's a big however. Here in the states for many years MSG has been asked to not show its face in public. Years ago I ate Chinese food and thought "Ooooh mommy this is good!" Then I heard about MSG. I kept eating Chinese food thinking "Ooooh this is good!" (mommy wasn't always there when I ate) Am I eating MSG I wondered? Who cares. I never got sick, didn't get head aches, didn't die. Now at my advanced age my doctor says cut back on the salt. (water retention, heart works harder, higher blood-pressure) MSG has less sodium than table salt by more than half. So here's the coincidence:
Within the past two weeks I saw a Chinese restaurant chef on television talking about authentic Chinese food. (bunch more words and then he says) He uses MSG in the food at his restaurant. Then you come along.
1/2 teaspoon of msg* (*optional)
Of course any ingredient is (*optional) but someone is bound to ask "can I use regular white rice if I don't have Jasmine?" or "I don't have a bay leaf, can I still make this soup?" or "Do I have to use MSG? I have the syndrome and I can't eat it."
So thank you for including MSG. Not everyone can eat it but I can and it's available at my local healthy grocery store farmers market fresh natural organic etc etc.
Swanson® makes unsalted stocks and broths. I drink it straight. It's about 60 calories per carton, has very little nutritional value other than maybe 8g protein per carton and is delicious. Why would I drinkthat when I could have a Coke or Dr. Pepper. I guess sometimes I like savory instead of sweet.
BTW, I already have pearl barley and not quick, can I still make this soup. Can I use a rotisserie cooked chicken from the market and still make this soup? I have a bag of brown rice...

I, too, had pearled barley and a wild rice blend. Just make sure that you simmer long enough to cook the barley and rice. Watch your temp too. It was quite good but I burned the bottom of the pot.

Looks yummy, Mouth watering already. No Kroger where I live now so have to add
the diced Jalapenos to the regular chopped tomatoes. Looks like it would work fine
using the crushed type also. Home made is best. Used to shop in Kroger when I
lived in Dallas and Houston so guessing you are in Texas

Kroger owns/operates Ralphs and Food 4 Less supermarkets in California where Kroger branded canned goods and chicken broth are available. They are also available online.

I wish, But no. I am a big time fan and somebody had TM already. When I was in at MSK in NYC, My hospital room mate mentioned that he worked on Bluebloods. I did get to see him and the cast briefly on set and watch them work on an episode. Made my year.
